- 6 Eggs
- ¼ Cup Avocado Oil Mayonnaise
- ½ Medium-sized Hass avocado
- 1 Teaspoon white wine vinegar
- ¼ Teaspoon dried dill (or more to taste if fresh)
- Salt and pepper to taste
- Paprika to garnish
NOTE: I didn’t make my own mayo. I have a great mayo recipe, but we don’t eat much mayonnaise, and homemade mayo separates in just a couple of days. I also tried avocado oil once and my husband almost threatened divorce… So. Didn’t use it!
Boil your eggs. I’ll let you struggle with that one on your own! One hint: the older the egg, the easier it peels. So if you have chickens or get your eggs fresh from a lovely neighbor with chickens, and boil them right away, it’ll be a big fat mess. The best thing to do is let them stay in your fridge ** for 2 weeks and then boil them. They’ll peel really well in the 2-4 week range!
** If you have or get fresh eggs and can ask ahead of time, don’t have them washed. This removes the bloom on the egg, which makes it spoil faster and have to be refrigerated. Did you know we are the only country IN THE WORLD that does this? Most people keep their eggs on the counter, and it’s what I prefer. If you’re in a coastal community, ask for “sailor’s eggs”. Otherwise, just ask your provider of fresh eggs to put them straight in the carton and NOT in the fridge. They last a week or more longer this way, plus free up space in the fridge. Wash them when you’re ready to cook with them.

Cut the eggs in half longwise, and slide the yolks into small bowl.
I did not use her measurements!! There is a lot of mayo and avocado for just 6 eggs in my humble opinion… (I told you I was being rebellious!)
Mash with a fork and mix. She says to put it in a food processor but come on… Soft yolks and soft avocado – who wants to do extra dishes when all you need is a fork!
That’s about 2 min after I was done. Just spoon it in and pass them around. No one will care what they look like!
HINT on deviled eggs for a picnic/boat from my grandmother, who is 101 and knows things: after you make the eggs, put 2 halves together to make a “whole” egg again, wrap in plastic wrap, and put them back in the egg carton. Super easy to transport, super easy to eat, and no clean up!
