Well, I (Jennings) moved to Nicaragua in January, where we own and run a hotel. Ryan and her husband are currently traveling around the US in a half-year work/play trip. So while we’ve been cooking (of course!), we’ve been a bit busy!
Recently, however, I’ve been getting a lot of requests for the recipes I use at the hotel and in my cottage-industry business, The Accidental Bakery. So what better place to start sharing those than here?!
Because we offer freshly baked goods daily at the hotel, I’ve had to adapt to both the conditions, and the available ingredients. And the equipment, either bringing things in from the States or going without a lot of items of cookware that we take for granted in the First World (or Developed countries, or whatever we’re supposed to call them now!). I’ll also post the best gluten free muffin recipes, which all freeze really well. Not all baked goods translate easily to gluten free, but the ones that do are delicious! I love when we have gluten free guests that I can share fresh baked goods with.
