Peanut or other nut butter (the original recipe uses almond)
Chocolate if your choice (I used semisweet chips)
NOTE: No measurements here, as you can make as much or little as you like. I made one banana worth.
Cut the banana(s) into about 1/2" slices. I just ate the ends! Spread some peanut butter onto one slice and top with another, until all the slices are paired into beautiful little banana peanut butter sandwiches. Freeze at least one hour.
Once your little pb&b sandwiches are frozen, melt chocolate in a bowl in 30 second increments until melted. (If it seizes up, just add a little coconut oil and stir and it will be fine!) Dip your sandwich bites into the chocolate, place in the cookie sheet, and return to the freezer for at least an hour. Although the chocolate hardens when it is in contact with the frozen banana, so you could skip that part and just eat them!
RP Servings: 1 medium banana, or about 12 bites, is 1 1/2-2 servings. Or 1 if it's a meal!

The frozen texture is probably not my favorite, but otherwise, it's everything I dreamed it would be! I'm going to try to eat one bite at a time and not just scarf them all.... We'll see!
I tossed the leftover melted chocolate with some kettle popcorn we had on hand. OMG. Now that's a 5!
