These are really tasty! To be honest, I was kind of skeptical once I mixed the coconut mixture together. But they are GOOD. I think I'd like them with the almonds on top, too. One mini-muffin size is plenty - they're rich. But there really are a lot of good, healthy ingredients in these. This is what we're talking about when we say clean eating!
