Marshmallow Popcorn

Apparently, today is National Popcorn Day! In honor of this obviously historical event, I've made some marshmallow popcorn from this recipe. It's actually very simple, and is only made up of 4 ingredients (most of which you probably already own).

I did originally look at the ingredients and think "man, one more step towards a sudden death by clogged arteries," and then I made it anyway. Worth it.

Ingredients:
  • 64 mini marshmallows or 8 big ones
  • 1/2 cup brown sugar
  • 1/4 cup butter
  • 1 bag low fat popcorn

To start, I actually made air-popped popcorn. IT'S JUST SO MUCH BETTER. And so much better for you! So here's my popcorn heating up...

Add all of the ingredients except for the popcorn to a microwave safe bowl, and microwave until melted. Stir every 20-30 second to combine ingredients and ensure they melt smoothly. This is what you'll start and then end with...

Pour on top of the popcorn and mix well to combine.

So this result will highly depend on your sweetness tolerance. My husband doesn't have an extremely strong sweet tooth, so this was a bit too much for him. He asked if I could add some more popcorn to dilute it a bit, which I did.

Originally, it could be compared to that 100% chocolate/caramel covered popcorn you get as Christmas presents from neighbors and distant Aunts. It's delicious, but so very sweet. Once I added additional popcorn, it could be more easily compared to the chocolate/caramel drizzled popcorn. You can certainly taste it strongly, but it's not make-your-teeth-ache sweet.

RP servings: This one is tricky. We started with the super-sugar popcorn, which you really can't eat very much of at all. You can eat more of the diluted version in one sitting, but it's still pretty rich. We ate a bunch, and we still have a fair-sized tupperware full of leftovers!
Rating: Around 3 stars. Once we added more popcorn- around 4 stars.
