Make sure your fish is dry before you cook it. Place the filets skin side down on a foil-lined pan that has been sprayed with non-stick spray. Drizzle fish with oil, then salt and pepper to taste. Rub the filets so that the oil/salt/pepper is all over the fish.
Stars: 4. It was a bit overcooked, which all probably depends on your oven. I would definitely make this again, but I would make sure to check it around 20 minutes instead of just waiting for the 25.
