Kentucky Buck Cocktail

MERRY CHRISTMAS!! This recipe is an interesting mix, one I haven't seen before: bourbon, strawberry, bitters, and ginger. I'm not sure how it will turn out, but my son, the cocktail master, is going to give it a try.

INGREDIENTS
1 chopped strawberry
3⁄4 oz. lemon juice
1⁄2 oz. simple syrup
2 oz. Wild Turkey bourbon (we used Makers Mark)
2 dashes Angostura bitters
2 oz. ginger beer
Strawberry slice, for garnish

Muddle the strawberry, lemon juice, and simple syrup in a cocktail shaker. Add the bourbon, bitters and ice. Shake and strain into a tall glass filled with ice. Top with a floater of ginger beer (pour a little carefully on top), and garnish with the strawberry.

RATING: 2 stars
Part of the problem with this is the SUPER hot/sharp ginger beer. I do NOT recommend this brand - even by itself, it burns all the way down. But once you get past the floater, you can actually taste the drink. One of us gave it a 3, the rest a 2. It's just... odd. You could try a milder ginger beer or use ginger ale, or leave that off altogether. But for us, this isn't a keeper.

Strawberry Lemonade Sorbet (with Protein)

Ok I admit - I have a peeve about all the Pinterest people calling something sorbet when it has dairy in it. THAT IS SHERBET, people. Ok. Now. That being said, this recipe is a "sorbet" (ahem) that has some protein in it, plus no white sugar in the form of simple syrup, which is kind of a sorbet staple ingredient. (I make a lot of *real* sorbet...) So it's healthier and 21 Day Fix approved if you're into that sort of thing!

INGREDIENTS
  • 4 cups frozen strawberries
  • 4 T raw honey
  • 1/2 cup plain Greek yogurt
  • 1 T lemon juice
  • 1 tsp pure vanilla extract

NOTE: see the comments about ingredients at the end before starting this!

For 21 Day Fix, this is 1 purple and not even 1/4 red

Put all the ingredients in a blender. This is where the negative thoughts started because, as you can see, there is no liquid in this recipe to speak of. (And raw honey is thicker than processed, plus the frozen strawberries basically make it almost solid.) I guess you could use a food processor?

We are supposed to be blending until smooth, but, of course, even my Vitamix can't blend pure solids.

I added milk - about 1/2 c although I was just pouring in until it would blend, so I don't have an exact measurement.

Because of the added milk, I then couldn't taste any lemon. (Not that 1 tbsp of lemon made "lemonade" anyway!) so I added a 2nd tablespoon of lemon. Mix. Put in an airtight container and freeze.

RP Servings: 3-4, but 4 for 21 Day Fix

RATING: on method, this is a 1. On taste (with the tweaks) it's a 3. Basically, it's a frozen smoothie, not sorbet OR sherbet

Ok, let's be serious. You CANNOT blend solids in a blender. I will assume you COULD do it in a food processor - it would be very loud, but it would probably get smooth. You could allow the strawberries to thaw, but I suspect the concoction would get icy when refreezing.

That being said, if you add milk, juice, or even ginger ale or a lemon lime soda (diet if you are watching sugar), you will have a frozen and easy to grab smoothie. It's a little hard after freezing, not soft like sherbet or ice cream to scoop, but the flavor is pretty good. We will probably use it to blend with vanilla protein powder to get a nice shake.

Berry Brown Butter Dump Cake

I know I'm on a bit of a dump cake roll, but I was intrigued by the brown butter element of this one. It's put together a bit differently, too, and then there's the berries. Blueberries, strawberries... Any kind really! I'm not a huge fruit lover but I do love fresh berries. (Also, I was making this on the 4th of July and chatting with my son, who was home for dinner, and totally forgot the ingredients picture. Sorry about that!)

INGREDIENTS

  • 3 cups blueberries, fresh or frozen
  • ½ cup sugar
  • 1 box yellow cake mix (I used King Arthur Flour's Gluten Free Yellow Cake Mix)
  • ½ cup (1 stick) butter, melted

  • Preheat the oven to 350. Mix the berries with the sugar and pour into a 9x13 baking dish.

    Melt the butter, then stir while it gets a nice brown. Use a mixer or fork or whisk to mix the butter and cake mix.

    Spread on top of the berries. Bake at 350 for 45 min or so. (Mine took over an hour and I ended up turning it to 425! Not sure what that was about - the other dump cakes didn't do that.)

    Serve warm or cool. We served it with vanilla ice cream.

    This wasn't the best one. Mixing the cake mix and butter together changed the way it cooked, at least with my gluten free mix. There also didn't seem to be enough butter to get it all moist, and the berries didn't have a ton of juice so it was, all in all, a little dry. The flavor was ok, but overall it was just that: OK.

    Strawberry Icebox Cake

    The really nice thing about icebox cake recipes is that usually, you can scale it down a lot. I had gotten some strawberries a little while ago, and we had forgotten about them in the fridge. So I found them, cut out the bad parts, and used them to make this this strawberry icebox cake!

    Ingredients:
    Graham crackers, strawberries, shipped cream. The original recipe called for:

    3 lbs strawberries, sliced
    1 14.4 oz box Honey Graham Crackers
    3 8 oz tubs Whipped Cream

    -to go in a 9x13 pan. I used a very small pan, and just guessed on proportions.

    Spread a thin layer of whipped cream on the bottom of the pan. Layer graham crackers, a thick layer of whipped cream, and strawberries.

    Repeat with two more layers, and top with strawberries. Let sit in the fridge for at least 4 hours, preferably overnight. Serve chilled.

    RP Servings: My little pan made 4 servings.
    Stars: 4! Everyone agreed on 4 stars, but no one could agree on what they would change. Some wanted more graham crackers, some wanted less, some wanted the same amount but distributed differently... if you're looking to please a crowd though, make as is.

    Strawberry Daiquiri

    If I got to pick what foods went where on the food pyramid, the world would be a better place. "But Ryan," you may say. "People can't live on strawberry daiquiris, pasta, and seafood alone!" Oh really. Tell that to me, back on my honeymoon. Gosh I loved my honeymoon.

    Ingredients for our easy-peasy Strawberry Daiquiris:
    3/4 cups rum
    1/2 cup lime juice
    3 tablespoons sugar
    1 pint fresh strawberries
    1-1/2 cups ice

    *Note- I divided this recipe to make just one cocktail.

    Place the ice in the bottom of the blender. Pour the other ingredients into the blender in the order listed.
    *Another note- I did this in the magic bullet. Which means I added my ingredients in the reverse order, since I was flipping the cup upside down to blend it.

    Blend everything and keep blending it until everything is smooth.

    Taste, then adjust ratios of ingredients to fit your taste. For me, this meant more lime, sugar, and ice. Blend blend blend.

    RP Servings: I think the original recipe made about 4?
    Stars: 4. There are strawberry daiquiri recipes that are probably a bit better, but they're also much more complicated and often include many more ingredients. This is a great middle ground between super easy, very few ingredients, and really, really good!
