- 2 cups cooked and shredded chicken (or 2 chicken breasts, salt and pepper- to taste, 1 Tablespoon mustard, 1 Tablespoon olive oil) - I used rotisserie
- 1 cup grated cheese (I use mozzarella) - I used Mexican

- 2 Tablespoons cilantro-chopped

- 4 Tablespoon sour cream - I used Greek yogurt

Okay, there was no way that plain sour cream (or Greek yogurt) was going to add enough flavor to this recipe, which is flexible but clearly bland. (And we've discussed that my husband can be a card-carrying curmudgeon about his dinners not being good, so I'm already taking a risk!) I added chili powder, cumin and red pepper to the yogurt to give it some pop. You could add taco seasoning, or any other spice combo you'd like!
I made some gluten free burritos and then tried to make my husband's. I got small tortillas, which was a mistake. If you're going to do burritos, you'll need large tortillas for sure. I made him 2, and could hardly get them wrapped even with not to much inside, then decided to make a quesadilla, too.
I decided to cook my burritos in the oven rather than a pan because there was NO WAY they were going to stay together. I cooked them at 400 for about 20 min, and spread a little olive oil on top to get that nice browning.
Then I cooked the quesadilla with some olive oil over medium heat.

Even with the doctoring, these were kind of bland. Great for kids, and easy, but still bland.
I think you could get them to a 4 (but in no way to a 5, which some of her commenters gave it even with the mozzarella and plain sour cream). I would cook or reheat the meat with some Mexican seasonings, and add more flavor to the sour cream/yogurt. I used the Mexican cheese blend and it is also a bit ho-hum - maybe a sharp cheddar? Sauteed or caramelized onions would be a nice addition. Basically it's a good base to start playing, I think.
