Do you remember how in My Big Fat Greek Wedding, people are always being told to eat? Oh, you just ate dinner? Eat another one! No? Ok, here's some cake instead. I think I channel my inner Greek whenever we have people come to stay with us. I know what a normal person eats, and I decide JUST IN CASE, I'd better triple it and add in some desserts and snacks. We had a friend coming to stay with us for the night, so I thought this would be a good opportunity to make desserts that I should seize. Hence, "easy and delicious" (but incredibly unhealthy) Cracker-Roca.

Ingredients:
  • 2 cubes of butter (FYI, a cube of butter is a stick of butter. I had to google this.)
  • 1 cup brown sugar
  • 1 bag of your favorite chocolate chips
  • 2 sleeves saltine crackers

*Note- I cut this recipe down to a bit less than a fourth.

Preheat oven to 400 degrees. Grease a cookie sheet and cover the bottom with saltine crackers. If you get to the edges you may have to break crackers in half to fill the bottom of the pan.

Add your butter and brown sugar to a small sauce pan and stir until combined over medium/low heat.

Let mixture boil for three minutes and stir constantly.

Once boiled, pour mixture over the saltine crackers and put them in the oven for for five minutes.

As soon as you pull the pan out of the oven sprinkle your chocolate chips over the hot crackers.

The chocolate chips will start to melt pretty quickly- when they do, smooth the chocolate out with a spatula.

Allow roca to cool in the fridge until hardened. You can eat some while they're warm though.

RP Servings: These were really rich, so I couldn't eat more than 2 (ok maybe 3) at a time. It looks like there are ~40 crackers in a sleeve, so the original recipe would make somewhere between 25-40 servings.
Stars: 4 or 5! I love desserts so I would give it a 5, but if you're more of a savory person you'd (obviously) like it less. They were really good. They were very sweet though, so if you're less of a sweets person I would use dark chocolate chips instead of milk chocolate.
