1 1/4 cup blanched almond flour (not the same as almond meal)
1/8 tsp. salt (I used fine grind sea salt)
1/4 tsp. baking soda
1/2 cup freshly grated cheddar cheese (I used extra sharp cheddar and lightly packed it into measuring cup)
1 1/2 T canola oil (I used light olive oil)
1 large egg
Preheat the oven to 350.
May I please say...
I AM SO DISAPPOINTED!!
RP Servings: Depends on the size of the crackers, but I'd say 4-6.
RATING: 1 star
I would have given this a ZERO (we threw it all away) except that we think it could definitely be made to be a 4. They had no flavor - it needs way more salt, and it would be good with some cayenne like cheese straws have. I'd guess at least 1 tsp of salt, and maybe 1/8-1/4 tsp cayenne. They aren't cheesy either, and I used extra sharp cheddar, so I'd up it to 3/4 c packed in the cup but not crammed in.
The good news is that it doesn't make a ton or use a ton of almond flour (although that stuff isn't super cheap!), so throwing it away wasn't the worst crisis ever. But it was so dang disappointing.
