3 ears of corn out of the husk
1 can of organic black beans, rinsed and drained
1 cup sliced grape tomatoes
1/4 cup Cilantro
1 1/2 tsp. Apple Cider Vinegar
Olive oil cooking spray
1 Tablespoon Olive oil
1 clove minced Garlic
2 oz. Queso Fresco or Feta Cheese (I used feta)
While the corn is grilling, assemble the rest of the ingredients in a medium to large bowl.
RP Servings: 6 as a side, 3 - 4 as a main
For 21 Day Fix, a serving is 2/3 c and is 1 yellow and about 1/4 green. You could count a small amount of blue but each serving only has a small amount of feta

My husband LOVED this! He gave it 4 1/2 stars. I wasn't quite as enamored, but it is tasty, easy and healthy and will definitely make it into our rotation. I added a tbsp of apple cider vinegar, which is double the 1 1/2 tsp called for. Otherwise I didn't do any doctoring!
