2-3 Tbsp Canola Oil
1 Tbsp Salt
1 tsp Pepper
1-2 Tbsp Fresh Herbs (I used dried rosemary and thyme again)
Preheat oven to 450 degrees. Chop up herbs, then mix herbs, salt, pepper, and canola oil.
Stars: 4 to 5. The whole chicken had a little more flavor, and was a bit more juicy. This cut up chicken was a smidgen less juicy and didn't have quite so many notes of flavor, but was able to crisp up even MORE of that incredible, flavorful skin. So it's a trade off, and probably depends a bit on what you value more. For me, it's the tasty tasty skin, which means that this version gets 5 stars. If you're being a bit more healthy than myself and are forgoing most of the skin, you'll probably like the original a bit more.
