Well, that was the theory. The cauliflower does NOT mash with a potato masher (I guess it would if you cooked it to death...). So I used my Vitamix.
- 1 medium head cauliflower
- 1/3 cup chicken broth, warmed
- 2 tablespoons reduced fat sour cream (using plain Greek yogurt)
- fresh chives, thinly sliced, for garnish (I don't have these)

Hubby said 4, and I said 3, so we'll split the difference. He said, "I don't look at this as a potato substitute, just as a good side." Then he had seconds. I had a hard time seeing it as a separate side (mental weakness on my part!) and couldn't help compare it to both plain mashed potatoes and my potato/cauliflower mash combo. I'm also a texture person, and it's a little gritty for me. It was fine. The taste was good. It just wasn't my favorite thing. (I enjoyed the raw cauliflower pieces I ate when making it more than the mash!)
