Some of the comments from the pinned recipe remark how the original marinade wasn’t enough, so I went ahead and doubled it. Doubling was perfect- there really wouldn’t have been enough otherwise. Because of this, the ingredients listed below are doubled, in order to be enough for the 8 pieces of chicken.
- 8 of your favorite chicken pieces, skin on and bone-in (I had a package of 10 drumsticks on hand, so that’s what I used)
- 4 Tbsp soy sauce
- 2 Tbsp light brown sugar
- 4 Tbsp red wine vinegar
- 6 Tbsp olive oil
- 8 shallots, chopped (I used scallions instead - shallots are expensive!)
- 4 cloves of garlic, minced
- Salt and Pepper (I used about 1 tsp pepper and 1½ tsp salt)
- Handful of fresh parsley
It turned out pretty interesting- much more sweet than I thought it would be, and not nearly as much flavor as I thought there would be either... especially not for the BEST EVER roast chicken.
