This recipe has nice pics (of course - that's why we pin!) and the added benefit of a nutritional analysis. 329.5 calories per serving, to be *quite* exact! That's pretty good for a hearty soup with sausage and cream, if the RP Servings match the ones in the recipe. Let's see!
- 1 tablespoon olive oil
- 1 pound spicy Italian sausage, casing removed
- 3 cloves garlic, minced
- 1 onion, diced
- 1/2 teaspoon dried oregano
- 1/2 teaspoon dried basil
- 1/2 teaspoon crushed red pepper flakes, optional
- Kosher salt and freshly ground black pepper, to taste
- 5 cups chicken broth
- 1 bay leaf
- 1 pound red potatoes, diced
- 3 cups baby spinach
- 1/4 cup heavy cream
RP Servings 6-8 We ate a total of 3 servings, and there's more than half left. And my husband had done a weight workout at the gym in the late afternoon, so he wasn't skimping!

With spicy Italian and 1/2 tsp of red pepper it would have been way hot. I'm not sure why so many Pinterest recipes overuse hot spices, but even if you like hot food, I think you would lose a lot of the delicious flavors in this soup with so much. I probably will not add in the extra oregano and basil next time - I think the flavor of the Italian sausage is enough (but our farm sausage is GOOD). Also that extra cup of broth really helped, and maybe a bit more cream would be good.
As written, the recipe is probably a solid 3, and it was very good on this yucky winter's night!
