1 box gluten free (or regular) yellow cake mix
1 14oz-16oz bag frozen fruit (mine is strawberries, mango and peaches)
1/3 c spiced or flavored rum (I used mango)
2 sticks of butter
1/3-1/2c brown sugar
Preheat oven to 350.
Melt 1 stick of butter and mix with the rum in a 9x13" casserole dish. Cut up the fruit into bite sized pieces if necessary, and mix with the buttered rum. The butter will solidify around the frozen fruit - don't worry!
Bake 45-60 minutes or until cake is cooked through. The dessert will firm up as it cools - serve warm or cold, with ice cream or whipped cream if desired.

Yep, this is a keeper! In fact, the peaches were the "weak point", as my husband said, which was a surprise (it was all delicious, especially with ice cream, though!). You could so easily tweak this for different fruits, or add some oatmeal to the brown sugar topping. I'd say that the brown sugar made it *almost* too sweet (but I don't like super sweet stuff), but it was still a 4.5!
