After cooking and baking for two solid days, I needed a cooking break the day after Christmas, but the tribe was still hungry. Soup & sandwiches sounded good, and that was as good an excuse as any to try these Turkey- Pesto -Grilled Cheese Sandwiches. Good choice!!
For the bread, I grabbed a loaf of sliced whole wheat bread from the Harris Teeter bakery. Sliced turkey and picante provolone were both a weekly special in the deli. A jar of good pesto ( from the spaghetti sauce aisle) and a couple of red tomatoes rounded out the list of ingredients.
1 lb sliced turkey
1/2 lb sliced picante provolone
jar of pesto
8 slices Crusty artisan wheat bread, sliced
4 T. melted butter
Heat a skillet over medium heat. Brush melted butter on one side of each bread slice. Spread a thin layer of pesto on the other side of each slice of bread.
