I didn’t have the ice cream or whipping cream yet when I took the photo – this is another that needs basically all day, and good freezer-space planning.
1 box brownie mix (I used this WONDERFUL gluten free one) + everything you need to make it per tha package instructions. NOT family sized unless you double the other ingredients
1 container frosting (or if you’re super leisurely, whip some buttercream up!) – flavor of your choice. We used Hershey’s Dark
1 half gal ice cream of your choice
Sprinkles (optional – they usually have gluten or trans fat so we didn’t use them)
Make the brownie mix in an 8×8 pan and cook according to the package directions. Let cool.
When cool, top with frosting. Freeze for at least 30 min.
Soften the ice cream for 15-20 min. Spread on the frosting, cover with plastic wrap, and freeze. Use the whole container of ice cream!! (I mean, why wouldn’t you??) Freeze at least several hours.
Whip the cream until it makes soft peaks. Spread over the ice cream. Top with sprinkles or topper of your choice. Serve!

This is YUMMY! The brownie is super frozen, making the whole thing hard to cut and messy, but it’s delicious! It would be a great birthday cake.
