- 2 pounds carrots, diagonally cut into about 2 to 3-inch pieces
- 5 tablespoons butter
- 4 garlic cloves, minced
- ¼ teaspoon salt
- ¼ teaspoon fresh ground pepper
- chopped fresh parsley, for garnish
Preheat oven to 425 degrees. Grease a baking sheet and set aside. Melt butter in a large skillet, then add garlic. Stir frequently, cooking for about 3 minutes or until golden brown. Make sure not to burn the garlic.
Stars: Probably about a 3. They were dismal until I added a bunch more salt and some more pepper. Just adjust the seasonings to taste and it’s a pretty decent side dish, particularly if the only vegetable you’ve got in your fridge is carrots!
