Spoiler alert, this one made my husband mad. I will put his quote at the end…
- 1 box (10 ounces) frozen corn kernels
- 1/4 to 1/2 cup whole milk
- 3 ounces reduced-fat cream cheese, cut into pieces
- 2 tablespoons snipped fresh chives
- Coarse salt and ground pepper
So basically, this isn’t the Martha Stewart recipe. BUT, in my defense, the substitutions were legitimate, and it definitely gives us a preview of what the recipe would taste as written. And now, for my husband’s pronouncement: “For twenty years your cooking has been consistently 4s and 5s… and these Pinterest recipes are NOT!” Okay, so yes, that was a compliment. But it’s only January 12, so it doesn’t bode well for this experiment! Clearly, I need to choose better, at the very least.

Yeah. Not a hit. It wasn’t the flavor of the Garlic and Herb, I should point out. That was very subtle – I’m not sure you would have picked it out if you didn’t know. And it melted just like cream cheese would, although, of course, it didn’t have all the tangy flavor of cream cheese. I should have just made my regular pan roasted corn, or even dumped the can into a pot and served it with butter. Well. Live and learn.
