How, you might ask, can this be 2 stars? Well, they were definitely overcooked. The texture was okay – kind of steakhouse smooth. But that khaki color was because they were on the wrong side of just-right.
That being said, they could be really good if cooked less. I’d probably try 3 – 4 hours on Low and test them next time. If you’re going to be gone all day, maybe cook them on low for 1-2 hours, and let them sit on warm the rest of the day. Basically, they’re only marginally better than a microwave potato and not nearly as good as an oven baked as the recipe is written. But cooking them in the crock pot is a GREAT idea, and I think you can tweak the time to get it just right!
