1 Box of gluten free cake mix (or regular) – I use King Arthur Flour Yellow Cake Mix
1 20 oz can of crushed pineapple with juice
1 15 oz can of peach slices with juice
1 1/2 sticks of butter
whipped cream and/or vanilla ice cream
This whole thing seems improbable, but so many people have done it I am going on faith here!
Put into a 350 degree oven.
RP Servings: There are 3 of us here… I’d like to say this will serve 8-10, but I think it’s likely 5-6 is generous with this crowd.
Hubby says 4 (but 5 with a different fruit); our friend Bob says 7… So we’re counting that as a 5! I’d say 4 1/2 for sure – it’s really addictive. The crust is crispy and buttery, the filling isn’t too sweet and doesn’t taste “canned”. It’s actually really addictive… And SO easy. It’s definitely a winner!
