1 1/2 c rolled oats (old fashioned, NOT quick cooking! If you’re GF, make sure they are certified GF)
1/2 c honey
1/3 c coconut palm sugar
1/2 c peanut butter
1/2 c semisweet chocolate chips
1 1/2 c unsalted chopped nuts: almonds, peanuts, pistachios, your favorite, a blend of the above
1/3 c shredded unsweetened coconut
2-3 tbsp flax seed (optional)
In a large, microwave safe bowl, mix the honey and coconut palm sugar. Microwave on high for 1 minute. Stir. Repeat. Microwave another 45 sec to a minute, until foamy.
RP Servings: Well………. they’re really good. Theoretically about 12, but probably more like 8.

I absolutely love these (and my son does, too)! They are great for a snack, breakfast, post-workout… If you’re gluten free, you know it’s really hard to find something good for those mornings you need to grab something and run out the door. These are those!
