- 2/3 c Greek yogurt (I used half this – you could use flavored and/or regular yogurt)
- ½ banana
- 1 tsp coconut oil (I used half this)
- 1 tsp apple pie seasoning (I didn’t have so used cinnamon)
- ½ tbsp unsweetened shredded coconut (I just sprinkled)
- 2 tsp honey (I used 1/2 tsp and it was plenty!)
NOTE: I added vanilla to my Greek yogurt. You could get flavored yogurt and omit this!
Also, the way the recipe is written, if you’re doing 21 Day Fix, it would be 1 red, 1 purple, and 3 teaspoons. I only get 2 teaspoons per day, and didn’t want to use them all on this! You can fit it to your taste and daily intake if you’re doing 21 Day Fix.
Heat the coconut oil in a nonstick pan over medium low heat. Place your banana slices in. The recipe says to cook 3-4 min but mine were caramelized in under 1, so use your judgement! Flip them over.
The recipe adds the honey and spice to the yogurt rather than the hot bananas, but I wanted more of the real bananas foster mouth feel and texture so I added them to the bananas once I turned off the heat and stirred til it got nice and saucy.
Spoon the bananas in your yogurt and sprinkle with the coconut.
RP Serving: 1
For 21 Day Fix, mine was 1/2 red, 1 purple, and 1 tsp
This was REALLY good! And super fast and easy. I was glad to use up the banana that was too far gone for much else, too. This will definitely be in my rotation!! And I wouldn’t want more honey, coconut OR yogurt – it was perfect for my tastes with these proportions.
