- 2 lbs. baby carrots
- 1/3 cup butter
- 1/2 teaspoon salt
- 1/3 cup brown sugar
- 1/2 teaspoon ground cinnamon
- 1/2 cup water
I halved the recipe.
Add the carrots to the Instant Pot. Top with the remaining ingredients.
When the timer finishes, quick release, stir, and serve.

Now, while I’m not opposed to glazed carrots as a concept, I actually don’t really love them. They’re kind of like sweet potatoes when they’re served with marshmallows and all that jazz- they’re fine, but just sort of “meh” to me. There are just so many other many ways to prepare these vegetables that I’d prefer to eat! I’ll usually just have a couple whenever they’re served and ignore the rest. So, I let my husband judge this recipe solo, since he actually does like them!
Since he said either 4 or 5 stars on taste, I’m going to ultimately give it a 4 for a couple of reasons. First, the smaller carrots were overcooked, and fell apart when moved. I think that 4 minutes was too long unless you have really big baby carrots. Second, the “glazed” part is inaccurate. It has a watery sauce, but it’s definitely not a thick glaze.
Other than that, these tasted as you’d expect, and were very quick and easy to make!
