1 package of kielbasa
4-5 any potatoes (we used red potatoes)
1 chopped onion
Salt, pepper, thyme, and paprika to taste
Pre-heat oven to 400 degrees. Chop up onion, potatoes, and kielbasa into bite-sized pieces, and put them all in a casserole dish. Drizzle a couple of Tbsp of olive oil on top, and mix in all spices.
The recipe calls for 45 minutes to an hour of cooking time, mixing every ~15 minutes. Instead, he partially cooked the potatoes in the microwave before chopping them, and only put the mixture in the over for 20 minutes. It turned out perfectly!
Stars: 4. I never actually ate this growing up, but it still had that “comfort food” feel that often accompanies potatoes!
