1/2 cup Hellmann’s or Best Food’s Real Mayonnaise
1/4 cup shredded Parmesan cheese
4 boneless skinless chicken breast cutlets
4 teaspoons Italian seasoned dry bread crumbs
Note- chicken cutlets are way more expensive than getting chicken breasts for $2/lb at the Harris Teeter butcher counter and butterflying them. As we like to be healthy, I went with 3 chicken breasts for the same amount of topping (meaning a higher protein to mayo/cheese ratio!).
First, preheat the oven to 425 degrees. Then, cut up the chicken in put it in a casserole dish sprayed with non-stick spray.
Soooo this was actually really good! It’s kinda rare that these really efficient types of recipes are actually successful, but this will definitely be made again!
RP Servings: My husband ate 2 with sides, I ate 1 with sides. My total servings was 4, but the recipe as written would make maybe 2? 2.5?
