Oh, mug cakes. I spent a lot of time in 2015 trying to find a decent mug cake. I was really, really unsuccessful. Something about shortcuts not leading to the same results as putting in the actual work? Weird.
So let’s try it again!
- 4 tbsp all-purpose flour
- 1/4 tsp baking powder
- 1 tbsp granulated sugar
- 1/4 cup fat-free milk
- 3 tbsp creamy peanut butter
- 3 tbsp semi-sweet chocolate chunks or chocolate chips
In a microwave safe mug, add all ingredients except chocolate. Mix everything together vigorously until batter is smooth and no flour chunks remain.
Stir 1 tbsp of chocolate chips into the cake batter. Add another 1 tbsp concentrated in the center/middle of the batter. Sprinkle remaining 1 tbsp on top.
Microwave for 1 minute. If still gooey, microwave for 15 more seconds.

Stars: Ok here’s the thing. When it was hot and you got bites with lots of chocolate, it wasn’t actually bad. Add a pinch of salt and at might have even been… pretty good?? I give it 3 stars, but 4 stars for a mug cake!
