I already had a pineapple from my Dole Whip experiment, so I thought I’d put the rest of it to good use and add alcohol! I’m a sucker for sweet drinks, tropical drinks, and anything with rum, so this really should be a slam dunk. (Side note- when I was writing this I accidently wrote “slam drunk,” which I think is an absolutely hilarious Freudian slip.)
- 3 cups pineapple
- 3/4 cup coconut water
- 3 ounces rum
Cube and freeze pineapple.
Pour the coconut water and rum into a blender. Add pineapple cubes and cover.
Blend until mixture is smooth and no chunks remain.

Stars: 3. This was average, nothing to write home about. It is very important to blend this completely- I didn’t blend it enough at first, and while I normally like pulp, this was bad when it was chunky. I do think it would be better with a more ripe/flavorful pineapple! But still, it feels like it’s lacking something. It needs something extra to help elevate it above average. Mixologists, feel free to give it a whirl and report back!
