I’m always, always looking for new vegetable side dishes. I never feel like my veggie sides have enough variety. So, whenever I see a new one (especially an easy and super quick one!), I like to jump in it. This Radish Cucumber Salad was definitely a new one! I do make something similar- substituting tomatoes for radishes and red wine vinegar for lemon- but this is a new recipe, and I was excited about it!
- 1/2 cucumber, peeled and cut into thin strips
- 4 radishes, cut into thin strips
- 1/4 red onion, finely diced
- 1 tablespoon olive oil
- 1 1/2 teaspoons lemon juice
- 1 pinch garlic salt, to taste*
- 1 pinch lemon pepper, to taste*
*Now, I didn’t actually have garlic salt or lemon pepper. But the fun thing about both of those is that they’re just mixes of other ingredients! Garlic salt is (wait for it) garlic and salt, and lemon pepper is lemon zest and pepper. So I made my own of each.
Put the cucumber, radish, and onion in a bowl.
Mix the oil, lemon, garlic salt, and lemon pepper in a small bowl. Pour over vegetables. Mix.
RP servings: 1.5 to 2.
Stars: 2 stars, but so easily could be 4 stars. It was technically edible, but I would not make it again as written. First (and this is not the recipe’s fault), it needs summer cucumbers and we’re in the middle of winter. The cucumbers tasted like absolutely nothing except water, so that didn’t help.
The lemon and oil ratios were off, and it also didn’t have enough salt. The onions were cut way too small compared to the rest of the ingredients. Finally- and I know this changes the dish dramatically- it was so much better with a bit of feta cheese. Seriously, you don’t need that much, and it was night and day. Unless you have to avoid feta for some reason, definitely toss some of that in!
