BUT, that’s one of the beauties of Pinterest! I had very limited time, because my husband had a meeting. I have very limited ingredients because I hadn’t done any shopping. We are also on a high protein (not keto or super low carb) diet, so my sides can sometimes be a bit boring. To be honest, I didn’t *need* this recipe, because I make these potatoes sometimes — but it’s a great one to have in your arsenal, and Pinterest remind me of it, so I thought it would be a good one to post. You really will thank me one busy evening!
- 1 bag baby yellow dutch potatoes [I used a bag mix of yellow and red]
- 1 tbsp EVOO
- freshly cracked sea salt and pepper, to taste [I used coarse kosher salt]
- garlic powder, to taste
- cooking spray [I didn’t use]
I love these bags of really small mixed new potatoes — most are about the size of a large gumball. They cook quickly, and get nice and creamy inside.
RATING: 4 stars — really yummy! (But maybe not the absolute best potato in the world)
