My family loves black beans! I have a go-to black bean burger recipe that I make just about every week. It’s so good on artisan rolls with sour cream, avocado, some red onion, and tomato! Mmmmm! But last night, when I grabbed all my goodies to whip up a quick dinner, the rolls were totally molded. Gross. I was scrambling, but I knew I needed a black bean meal. So to Pinterest I went and HOLY COW you guys. This meal is DELICIOUS. Like so good that you are full but want to eat more and that NEVER happens with healthy food, right? So do yourself a favor and make this ASAP!
1 TBSP. olive oil
2 cloves garlic, minced
1 tsp. cumin
1 TBSP. chili powder
salt and pepper, to taste
2 medium sweet potatoes, diced
1 medium red onion, diced
1 large red bell pepper, diced
1 jalapeno, seeded and chopped fine
3 cups cooked brown rice
2 cans black beans, drained and rinsed
Toppings (shredded cheese, sour cream, cilantro, green onion, avocado, etc.)
So, right off the bat, I made changes. I didn’t have a red onion, a red pepper, or a jalapeno so I used what I had: a white onion and an orange pepper. I left the jalapeno out (I’m cooking for toddlers) but I would like to make it again with the extra spice; it would be out of this world I am sure!
Preheat the oven to 400. Take the oil, garlic, cumin, chili powder, and salt and pepper and dump them all into a large bowl. Give them a good stir with a fork and they will form a kind of spicy, dark paste in the bottom of the bowl. Toss your chopped veggies into the bowl and use a soft spatula to stir them until they are evenly coated in the paste. Yum!
RP Servings: 6 servings. I would probably double this if I was going to be feeding more adults. It served the four of us (two adults and two toddlers) with a bit leftover. The leftovers are great too. Just toss everything together and heat it up.

It’s simple, filling, and delicious. It’s versatile. I can imagine adding some kale in the winter and having that nice pop of green. Best of all, it’s meatless and my hubby liked it. That’s huge! I found my new meatless Monday meal. How about you?
