So, I was determined to go run, because a couple of months ago I had decided that “signing up for a 10k is basically the same as signing up for a 5k when I have 6 months to train.” (FYI, I have 3 months left. I am now slightly less confident in my 10k-running abilities.)
I stumble back into my house at 7:00pm after “running,” at which point I remember two things. 1) Husbands often like to eat dinner, and 2) I didn’t go to the grocery store earlier like I had planned.
Standing in my kitchen, desolate and staring at my unpromising pantry which is comprised of peanut butter, spaghetti noodles, and a can of petite diced tomatoes, I looked at my Pinterest “Noodles” board. And miracle of miracles….
I had frozen shrimp. And that was all I needed.
1 1/2 teaspoons kosher salt
3/4 pound linguine
3 tablespoons unsalted butter
2 1/2 tablespoons good olive oil
1 1/2 tablespoons minced garlic (4 cloves)
1 pound large shrimp (about 16 shrimp), peeled and deveined
1/4 teaspoon freshly ground black pepper
1/3 cup chopped fresh parsley leaves
1/2 lemon, zest grated
1/4 cup freshly squeezed lemon juice (2 lemons)
1/4 lemon, thinly sliced in half-rounds
1/8 teaspoon hot red pepper flakes
Step 0- peel your uncooked shrimp, because you are poor like me and got this bag of easy peel frozen shrimp on sale, and definitely aren’t going to buy more shrimp that are already peeled.
