I somehow lost my pin for this one. It’s exactly this recipe, only instead of broiling and flipping a bunch of times, you bake at 350 degrees. Because as you know if you’ve read this blog before, I can’t broil. THE END.
2 teaspoons garlic powder
2 teaspoons chili powder
1 teaspoon salt
1 teaspoon ground cumin
1 teaspoon paprika
1/2 teaspoon ground red pepper
8 skinless, boneless chicken thighs
6 tablespoons honey
2 teaspoons cider vinegar
Combine first 6 ingredients in a large bowl, add chicken and coat them in mixture. Mix honey and vinegar in separate bowl.
Spray a broiler pan with non-stick spray, place chicken on broiler pan, and brush chicken with honey mixture. Bake at 350 for 30-45 min (until done). At 10-15 min intervals, brush chicken again with honey mixture.
Serve with rice. Use juices from bottom of broiler pan to top rice/chicken.
