Side dishes: the trickiest part of dinner. I’m actually pretty good at keeping our main dishes new and interesting, but the side dishes are where I struggle. It’s just so easy for me to fall back on salads! But it’s really nice to have some variety, and sometimes a hot side dish fits the meal better than a cold one. That’s where I’d hoped this dish might come in!
- 4 tsp olive oil
- 4 garlic cloves, peeled and smashed with the side of a knife
- 1 lb fresh baby spinach
- Kosher salt and fresh ground pepper to taste
Heat a large skillet over high heat until hot. When hot, add the olive oil and garlic. Sauté for about 3 to 4 minutes, until the color is golden on both sides.
Add the spinach to the skillet and toss with oil to coat. Reduce the heat to medium and stir.
When spinach is just wilted, about 2 minutes, remove from heat and season with salt and pepper.

Stars: 2. This was very disappointing! The garlic was burnt, the spinach was slimy, and it wasn’t seasoned correctly. Rather than adding the salt and pepper at the end, it should have been added while cooking. It was also missing some type of acid- maybe adding some lemon juice at the end would have helped. All in all, this was just not good!
